Veryl's Mushroom Soup

This soup has everything. It’s warm, hearty, creamy, and super delicious in addition to being very versatile. You can control the spice by adding whatever you desire or add more vegetables.

 
 

Ingredients:

  • 2 ripe chopped tomatoes

  • 2 cups mushrooms chopped finely

  • 1 medium red onion, chopped

  • 1 can of coconut milk (or cream)

  • 3 green shishito peppers (mild) or green chills (hot)

  • 2 tbsp oil of choice

  • 1 tsp salt

  • 1 tsp pepper

  • 1 teaspoon red chilli powder

  • 1/2 tsp ground coriander

  • 2 tsp onion powder

  • 2 tsp garlic powder

 
 

Method:

  1. Heat oil in pan and sauté onions until transparent

  2. Add tomatoes and cover the lid for a few minutes

  3. Add mushrooms, chilis, spices and sauté for a few minutes

  4. Add the coconut milk/cream and mix thoroughly

  5. Simmer for 15 minutes on very low heat

  6. Enjoy!
