Banana Oat Pancakes
These vegan friendly pancakes taste amazing. I can’t go back to regular pancakes as I find them bland and tasteless (like white refined flour). The combination of oats, banana, chia, flax, cinnamon, and chocolate makes for an earthy and hearty flavour that’s sure to get you hooked. It’s hard to go back to regular pancakes after you’ve had these. They’re also great source of fibre and super easy to make.

Ingredients: Serves 3 (6 small pancakes)
2 cups oatmeal
2 ripe bananas
1 cup milk of choice (I use coconut)
1 chia egg (in a small bowl, mix 1 tbsp of chia seeds with 2 1/2 tbsp water and let sit for 5 minutes)
2 tbsp ground flax seeds (for additional umph)
1/4 cup coconut oil
1 or 2 tsp cinnamon (I prefer 2)
optional - chocolate chips
Method:
Make the chia egg by mixing chia seeds with water and let stand for at least 5 minutes or until it thickens to a sol/gel like consistency
Put all ingredients in a blender except chocolate chips
Add the chia egg to the blender (after letting it stand for 5 minutes, it should be a pudding-like consistency)
Use a blender to blend all the ingredients until evenly mixed
Mix in chocolate chips into the batter
Heat pan with oil, add batter and cook through on each side
Serve with your favourite toppings: fruits, honey or butter etc. I prefer mine with just butter as the chocolate chips are sweet enough.
