Spicy Lentil Curry

Ingredients:

  • 2, 20 oz cans of lentils or 2 cups dry lentils washed and soaked overnight

  • 2 tbsp cooking oil

  • 1 medium onion chopped

  • 1 tsp minced garlic

  • 1 tsp minced ginger

  • pinch fennel and cumin seeds

  • 1 tsp salt

  • 1 tsp red chilli powder

  • 1/2 tsp ground coriander

  • 1/2 tsp turmeric

  • optional - 1 tsp garam masala

 
 

Method:

  1. Heat onion in oil and add seeds until they start to pop

  2. Add lentils with all the spices, ginger, garlic and cook on medium-high heat for 4 minutes, adding 1-2 cups of water as needed

  3. Mix and simmer for 15-20 minutes on low heat
