Spicy Lentil Curry
Ingredients:
2, 20 oz cans of lentils or 2 cups dry lentils washed and soaked overnight
2 tbsp cooking oil
1 medium onion chopped
1 tsp minced garlic
1 tsp minced ginger
pinch fennel and cumin seeds
1 tsp salt
1 tsp red chilli powder
1/2 tsp ground coriander
1/2 tsp turmeric
optional - 1 tsp garam masala
Method:
Heat onion in oil and add seeds until they start to pop
Add lentils with all the spices, ginger, garlic and cook on medium-high heat for 4 minutes, adding 1-2 cups of water as needed
Mix and simmer for 15-20 minutes on low heat
