Cardamom Orange Gluten Free Tea Cakes

Ingredients:

  • 13/4 cups gluten free flour - I used Bob’s Red Mill blend

  • 1/2 tsp baking powder

  • 1/4 tsp ground ginger

  • 1/2 tsp ground cardamom

  • pinch salt

  • zest of 1 medium to large orange

  • 2 eggs

  • 2 tbsp honey

  • 1 tsp vanilla extract

  • 1/4 cup coconut sugar

  • 7 tbsp melted butter

 
 

Method:

  1. Mix the flour, powders, spices, salt in a bowl

  2. mix the sugar with the eggs and the orange zest

  3. Beat in honey, and vanilla

  4. Fold dry ingredients with the wet ingredients

  5. Pour into silicone rounds (I used 2 rounds with 6 cakes in each round)

  6. Chill overnight in the refrigerator

  7. Bake at 325 degrees for 30 -35 minutes
