Simple Tofu Curry
Ingredients:
2 cups firm tofu cut up into bite-sized wedges or cubes
2 cups vegetable broth (or chicken etc)
2 tbsp chopped fresh basil
2 cups cremini mushrooms
1 bell pepper (red, yellow, or green)
1 onion - chopped
1 tsp minced garlic
2 tbsp soy sauce
1 tbsp minced fresh ginger
1 zucchini
Method:
Heat oil in the pan on medium-high heat and add chopped onion
Add minced garlic and ginger and stir
After the onion is slightly transparent, add the tofu with bell peppers, mushrooms
Cook for 10 minutes and add the broth with soy sauce
Turn heat to low and simmer for 15-20 minutes
Add fresh basil and stir, cook for 5 more minutes
Wash the zucchini and spiralize it to make zucchini noodles
Serve the hot curry over raw zucchini noodles (I like to call them zoodles)
Season with more spice such as siracha sauce if desired
