Easy Red Vegetable Curry

 
This is the easiest curry you could make. It’s great to mix together all of your leftover vegetables or meats etc. Whatever you have on hand. Add spices to taste and enjoy.

Ingredients:

  • Roasted Vegetables (broccoli, potatoes, onions, mushrooms - whatever you choose to roast!

  • 2 tbsp red or green Thai curry paste

  • 1 can of coconut milk

  • 1 cup fresh or frozen peas

  • t1/2 tsp turmeric

  • pinch salt - to taste

 
 

Method:

  1. Set aside 2 cups worth of roasted vegetables. When I roasted mine, I had broccoli, onions, mushrooms, and potatoes. You can roast your favourite vegetables in the oven and then set some aside to make this curry.

  2. Add coconut milk and the red or green Thair curry paste

  3. Stir over medium-high heat and bring to boil, add the vegetables

  4. Mix and simmer for 15-20 minutes on low heat
