Vegan No-Tuna Salad

Ingredients:

  • 2 cans chickpeas (540 ml)

  • 1 cup or more finely chopped celery

  • 1 medium sized red onion - finely chopped (soaked in cold water for at least 5 minutes and then drained)

  • 1/2 cup of vegenaise (or any other type of mayonnaise)

  • dash of salt and pepper

  • 2 tbsp fresh squeezed lemon juice

  • 1/4 cup pickles - finely chopped

  • 2 tbsp capers

  • 1 tbsp mustard (I use Kozlik’s brand)

  • pumpkin seeds

 
 

Method:

  1. Wash and drain chickpeas - set aside in colander to drain and add to a large bowl

  2. Use a potato masher or pastry blender (that’s what I used) to mash the chickpeas until you are satisfied with the consistency

  3. Add the remaining ingredients together and mix. Sprinkle with pumpkin seeds

  4. Enjoy!
