Vegan No-Tuna Salad
Ingredients:
2 cans chickpeas (540 ml)
1 cup or more finely chopped celery
1 medium sized red onion - finely chopped (soaked in cold water for at least 5 minutes and then drained)
1/2 cup of vegenaise (or any other type of mayonnaise)
dash of salt and pepper
2 tbsp fresh squeezed lemon juice
1/4 cup pickles - finely chopped
2 tbsp capers
1 tbsp mustard (I use Kozlik’s brand)
pumpkin seeds
Method:
Wash and drain chickpeas - set aside in colander to drain and add to a large bowl
Use a potato masher or pastry blender (that’s what I used) to mash the chickpeas until you are satisfied with the consistency
Add the remaining ingredients together and mix. Sprinkle with pumpkin seeds
