Date and Nut Logs

Ingredients:

Please note that these are not accurate measurements. This balls are incredibly easy to make. Just mix whatever nuts and seeds you have with something sticky (dried prunes, dates) and add whichever nut butter you prefer. Then add your favourite chocolate chips if you like and viola!

  • 1 cup walnuts

  • 1 cup almonds

  • 1 cup dates (pitted and soaked in warm water for about 10 minutes)

  • 1 cup dried prunes

  • 1/2 cup flax seeds

  • 1 cup almond butter or any other nut butter

  • 1/3 cup cocoa powder

  • 1/2 to 1 cup shredded coconut

  • 1/3 cup mini chocolate chips

 
 

Method:

You will need a powerful food processor for this. I have a cuisineart which works quite well but if you have something that works for you, that’s great. I am not a fan of recipes so whenever I have a bunch of nuts and dates laying around, I try to blend them all to make bars, balls, patties, and in this case…logs!

  1. Blend the nuts until crushed

  2. Add dates, prunes, and flax seeds

  3. Add almond butter and blend some more

  4. Add the remaining ingredients and pulse until well mixed

  5. The consistency should crumbly…don’t worry if it doesn’t look like it will stick as it will. You need some strength to really press these into your hands and make tiny logs.

  6. Transfer to a large steel bowl and roll into small logs, pressing as hard as you can to make the mixture compact

  7. Store in an airtight container in the refrigerator or freezer. Lasts up to 4 weeks in the refrigerator and 2 months in the freezer
