Omega-3 Brownie Bites
Ingredients:
Please note that these are not accurate measurements. This balls are incredibly easy to make. Just mix whatever nuts and seeds you have with something sticky (dried prunes, dates) and add whichever nut butter you prefer. Then add your favourite chocolate chips if you like and viola!
2 cups walnuts
1 cup almonds
1/3 cup cocoa powder
pinch of salt
1 cup dates (pitted and soaked in warm water for about 10 minutes)
1/2 cup to 1 cup almond butter
1 cup shredded coconut
1/3 cup mini chocolate chips
Method:
You will need a powerful food processor for this. I have a cuisineart which works quite well but if you have something that works for you, that’s great.
Blend the walnuts with almonds - pulse and add cocoa powder
Transfer crushed nuts to a large bowl and set aside - sprinkle the salt
Blend the dates with the almond butter
Transfer to the bowl with crushed nuts and mix well
Add coconut and chocolate chips
Make small balls and roll in coconut
Store in an airtight container in the refrigerator or freezer. Lasts up to 4 weeks in the refrigerator and 2 months in the freezer
