Fruit and Nut Peanut Butter Bites

 
I initially made them into cookies but later realized how filling they were. I decided to make small balls out of them instead which seemed like a great fit.

Ingredients:

Please note that these are not accurate measurements. This balls are incredibly easy to make. Just mix whatever nuts and seeds you have with something sticky (dried prunes, dates) and add whichever nut butter you prefer. Then add your favourite chocolate chips if you like and viola!

  • 1 cup almonds

  • 1 cup dates (pitted and soaked in warm water for about 10 minutes)

  • 1 cup oats

  • 1 cup dried prunes

  • 1/2 cup flax seeds

  • 1 cup peanut butter

  • 1/3 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1/3 cup mini chocolate chips

 
 

Method:

You will need a powerful food processor for this. I have a cuisineart which works quite well but if you have something that works for you, that’s great. I am not a fan of recipes so whenever I have a bunch of nuts and dates laying around, I try to blend them all to make bars, balls, patties, and in this case…logs!

  1. Blend the almonds, dates, chia seeds, oats and flax seeds until crushed

  2. Add dates, prunes, and flax seeds

  3. Add peanut butter butter and blend some more

  4. Add the remaining ingredients and pulse until well mixed

  5. The consistency should sticky and clumpy

  6. Transfer to a large steel bowl and roll into small balls or cookies

  7. Store in an airtight container in the refrigerator or freezer. Lasts up to 4 weeks in the refrigerator and 2 months in the freezer
