Chocolate Chip Cookies

These are my favourite go-to chocolate chip recipe from Detoxinista. I am simply adding a condensed bare bones version and have decreased the amount of chocolate chips as I tend to use the mini ones.

 

Ingredients:

  • 2 cups almond flour

  • 1/4 cup melted coconut oil

  • 1/4 cup maple syrup - room temperature

  • 1/4 teaspoon salt

  • 1/2 baking soda

  • 2 tsp vanilla extract

  • 1 tsp apple cider vinegar

  • 1/4 cup vegan mini dark chocolate chips

 
 

Method:

  1. Preheat oven to 250F

  2. Line baking sheet with foil or parchment

  3. In a large bowl, combine all ingredients and mix till a sticky consistency appears

  4. Use your hands to make balls and flatten them with a fork or your thumbs (these cookies don’t tend to spread while baking so you can keep them closer together on the sheet)

  5. Bake for 30 minutes

  6. Remove and let cool for 10 minutes
