Gluten Free Spiced Ginger Cookies

Ingredients:
2 1/2 cups almond flour
1/3 cup coconut sugar
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1/2 cup peanut butter
1/4 cup molasses
1/4 cup coconut milk
Optional: combine some white sugar with cinnamon to dust the cookies with
Method:
Preheat oven to 350 F
Line a baking tray with foil or parchment
Combine all dry ingredients in one bowl
Combine the wet ingredients in a separate bowl
Mix the wet ingredients with the dry ingredients
shape into balls and flatten to create your cookie size
Be careful as the cookies will expand - so give them space in between to grow!
Optional: Dust the tops of the cookies with cinnamon sugar
Bake for 10-12 minutes - sometimes this depends on your oven so you can take 15 minutes at most to bake them
Remove from heat and allow to cool completely
