Peanut Butter Chocolate Coated Balls
I usually don’t like using recipes so there will be times I’ll focus on consistency rather than a recipe which I think is a much better indicator as there are many factors that can cause error in measurements.
Ingredients:
1 1/2 cups all-natural chunky peanut butter
4 tbsp sweetener of choice (I was out of maple syrup so I used apple syrup)
6 tbsp coconut flour
cocoa powder
coconut oil
sweetener
Method:
In a bowl, combine peanut butter, sweetener and coconut flour until the consistency resembles cookie dough. If it’s too liquidy, then add more coconut flour by the tablespoon and if it’s too dry, add more peanut butter
Shape into balls (or whatever shape you desire). Place on a plate covered in foil or parchment paper and freeze for 30 minutes to an hour
Make the chocolate and dip the balls with two spoons and put it back on the plate
Freeze for up to an hour
Store in an airtight glass container in the freezer
