Moist flourless orange cake

I have a similar recipe on the blog but it’s chocolate orange cake - this version has no cocoa powder and perfect for someone who loves a light, moist tea cake - of course they have to love oranges. Enjoy!

 

Ingredients:

  • 2 navel oranges - seedless

  • 2 cups almond flour

  • 6 eggs

  • 1/3 cup sugar

  • 1 teaspoon baking powder

 
 

Method:

  1. In a medium saucepan, add two whole oranges and cover with cold water. Bring to a boil and then simmer for two hours. Oranges should be soft. Blend whole oranges in blender. This can be stored for up to 2 days in the refrigerator

  2. Add eggs, sugar, and almond flour, and baking powder and mix thoroughly

  3. Bake at 350 for 45-50 minutes until toothpick inserted comes out clean
