Caramelized Onions, Pear & Brie Bites Drizzled with Honey & Walnuts

I made these on a whim as I was looking for something creative to do with the ingredients that I had on hand.

 

Ingredients:

  • 1 small loaf of ciabatta bread or baguette sliced in 1/2 inch thick pieces - I had olive ciabatta on hand but ideally, I’d opt for plain bread

  • 1 wheel of brie cheese

  • 2-3 bosque pears sliced thinly

  • 1 tbsp butter

  • 1 medium onion

  • 2 tbsp crushed walnuts

  • Thyme or rosemary - to sprinkle on top

  • Honey - to drizzle

  • Sherry - I used Alvear Solero

 
 

Method:

  1. Heat butter in pan and sauté onions until transparent

  2. Add sherry to caramelize the onions to your taste - set aside

  3. Line a baking tray with foil and place slices of bread

  4. Top with brie cheese slices followed by a teaspoon of the caramelized onions, then pear

  5. Bake in the oven for 5-10 minutes and then broil for 3-5 minutes

  6. Drizzle the honey with a spoon

  7. Sprinkle crushed walnuts and dried rosemary or thyme to taste

  8. Enjoy!
