Lemon Blueberry Cake

I’ve made this cake several times, for birthdays, surprise wedding shower for a colleague, and for friends. It’s a little bit of work but every bit worth it. You can make layers with this cake and it works really well or if you’re like me, you’ll make several different cakes share with twice the amount of people! Whatever you choose to do, it’s guaranteed to be a popular one ;) I haven’t yet tried a gluten free version but this was before celiac…I’ll post the recipe as soon as I make a gluten free version!

Remember to not over mix/over beat as this will result in a very dense batter (you can tell from the pictures I’ve done this once).

 

Ingredients:

  • 1 cup butter unsalted at room temperature

  • 1/4 cup coconut or vegetable oil

  • 1 cup granulated sugar

  • 1/4 cup brown sugar

  • 4 eggs at room temperature

  • 1 tsp vanilla extract

  • 3 cups cake flour

  • 1 tbsp baking powder

  • 1 cup buttermilk

  • 3 lemons - juiced and zest saved

  • 1 1/2 cups blueberries

  • flour for tossing the blueberries in before folding into the batter

    Cream Cheese Frosting

  • 8 oz cream cheese at room temperature

  • 1/2 cup unsalted butter at room temperature

  • 3 1/2 cups icing/powdered/confectioners sugar

  • 2 tbsp cream

  • optional - vanilla 1 tsp

  • salt

  • optional - food colouring

 
 

Method:

  1. Preheat oven to 350 degrees F

  2. Lightly flour your cake pans. If making layers, use 3, 9 inch cake pans and coat with nonstick spray

  3. Beat the butter and coconut oil until creamy, add sugars and beat until creamed

  4. Add eggs and vanilla and beat until all ingredients are combined and set aside

  5. In a separate large bowl, add flour, baking powder, salt and add the dry ingredients to the wet ingredients on low speed. Add the milk, lemon zest and juice.

  6. Mix until everything is combined

  7. Toss the blueberries in a small amount of flour and fold into batter (google folding technique)

  8. Spread the batter in your cake pans and bake until toothpick inserted in centre comes out clean

  9. Timing will vary on the types and kinds of pans you are using. If using 2 cake pans, the time will be longer, if using more than 2, it will be shorter. When I baked 3 layers, it took 25-29 minutes in my oven but you’ll have to play with the speed of your oven

  10. Let the cake cool before applying frosting

  11. Use a mixer for this as it will be so much easier. Beat cream cheese, butter until mixed. Add sugar and cream and vanilla, salt and mix on low

  12. Mix until desired consistency

  13. Frost away!
