French Onion Soup

Recipe:

  • 2 tbsp butter or vegan butter substitute

  • 2 cups thinly sliced onions (2 large onions)

  • 4 cups broth (beef, chicken, vegetable)

  • 1 tsp Worcestershire sauce

  • Pinch of salt

  • Pinch of pepper

  • 6 slices toasted bread

  • 3/4 cups shredded Guyere or Jarlsberg cheese (3 oz)

 
 

Method

  1. In a large saucepan, melt the butter and stir in onions.

  2. Cook covered on medium heat for 8-10 minutes till golden tender, stirring occasionally.

  3. Stir broth, sauce, salt, pepper, and bring to a boil.

  4. Reduce heat and cover. Let simmer for 10 minutes.

  5. Add the soup to individual ramekins/soup bowls.

  6. Cut slices of bread and toast.

  7. Place the slice of bread on top of the soup

  8. Sprinkle toasted bread with cheese.

  9. Broil the ramekins/soup bowls till cheese is light-golden.
