French Onion Soup
Recipe:
2 tbsp butter or vegan butter substitute
2 cups thinly sliced onions (2 large onions)
4 cups broth (beef, chicken, vegetable)
1 tsp Worcestershire sauce
Pinch of salt
Pinch of pepper
6 slices toasted bread
3/4 cups shredded Guyere or Jarlsberg cheese (3 oz)
Method
In a large saucepan, melt the butter and stir in onions.
Cook covered on medium heat for 8-10 minutes till golden tender, stirring occasionally.
Stir broth, sauce, salt, pepper, and bring to a boil.
Reduce heat and cover. Let simmer for 10 minutes.
Add the soup to individual ramekins/soup bowls.
Cut slices of bread and toast.
Place the slice of bread on top of the soup
Sprinkle toasted bread with cheese.
Broil the ramekins/soup bowls till cheese is light-golden.
