Banana Oat PB Bars

These bars are made with powdered peanut butter. Yes, I too thought it was gross but I use it in my smoothies and decided to give it a try in this recipe. Turns out great! Cut into square and enjoy with a turmeric latte for a snack or breakfast

 

Ingredients:

  • 7 ripe bananas

  • 4 cups gluten-free oats

  • 1 cup peanut butter

    • powdered version: 14 tbsp powdered peanut butter and then add 3/4 cup water

  • 1/2 -1 cup vegan chocolate chunks or chips optional

 
 

Method:

  1. In a large bowl, mash the bananas with a fork

  2. Add the oats

  3. In a small bowl, add the powdered peanut butter and then add water, mix until you have a thick creamy consistency

  4. Transfer peanut butter to the large bowl and mix thoroughly

  5. Add in chocolate chips

  6. transfer to a square 8 by 8-inch pan and bake at 350 degrees F, until golden brown on sides
